The Hallyu Wave became a global phenomenon in 2009 when the entertainment scene opened entry to the Korean culture. This led to a massive K-penetration from all angles! From K-fashion, K-drama to K-pop! The success of this industry has become an agent in introducing the Korean culture to parts of the world where you wouldn’t normally expect. (For example, South America!)

With the Hallyu wave taking over, the signs of K-food conquest have also very quickly entered the Malaysian foodies’ lexicon! Korean BBQs have become staples everywhere, and Kimchi is the new Miso! (Sorry Miso, but you’ve been knocked out of the South East Asian top spot!).

Kimchi is literally served with almost any type of Korean cuisine, be it bbq-ed meat, noodles, stew or even eating on its own with plain rice. It can be infused into the dish fully like the kimchi fried rice, kimchi stew, kimchi pancakes or served separately as a side dish in small portions. For the ones who have never tasted kimchi or have no idea what it is, it’s spicy pickled cabbage. This staple Korean delicacy has been proven to be tasty and nutritional, even dubbed as the next ‘superfood’.

Despite that kimchi recipes may vary according to one’s ancestral recipe, the generic kimchi is made up of the following ingredients: cabbages (duh), red peppers, scallions, onions, garlic and salt. Different variations include carrots or even radish.

Kimchi contains a very rich content of vitamins A and C resulted from its fermentation process. Aside from that, it also contains a very high content of lactobacilli bacteria which would prove to be healthy for your guts and digestive system, aiding in ailments like constipation. Research has also shown that it provides anti-obesity and immune-stimulating properties. It has also been observed that there are components within the kimchi that could prevent the growth of cancer cells. Health.com even stated that kimchi is one of the top 5 Healthiest Foods in the world.

Every September, families will gather to make kimchi in batches, and the supply will last them a YEAR! If you’re a kimchi-lover and food enthusiast, you could actually attempt to make your own kimchi in smaller batches! Here’s a good recipe video you can follow:
